Roasted vegetables with egg

When we hear about roasted things, we imagine some mouthwatering foods being in front of us. So when we roast vegetables, fish, or meat it becomes relish. Because when we wish to roast, then we use some special spices which make something different from other ways of cooking. It is absolutely true because my daughter does not like vegetables, if I cook in a traditional way. One day I have thought that why I not served her the roasted vegetables? I cooked the item with varieties of vegetables with white rice and observed that she surprisingly liked it. Now I do not feel any hectic to feed her vegetables. The common spices of roast are red chili powder, cumin powder, black pepper powder, coriander powder, oregano, rosemary powder, etc. Today I will share with you a delicious item “ roasted vegetables with eggs”.




Ingredients:

  • Any kinds of vegetables (here I use potato, carrot, beans, bell pepper): 5 cups

  • Eggs: 5 pieces

  • Onion slice: 2 cups

  • Garlic slice: ⅕ cup

  • Chili powder: ⅕ teaspoon

  • Peppermint powder: 1 teaspoon

  • Cumin powder: 1 teaspoon

  • Mustard powder: 1 teaspoon

  • Oregano: ⅓ teaspoon

  • Coriander powder: 1 teaspoon

  • Salt : 1 teaspoon

  • Oil: 1 cup


How to cook:

  • First, boil the eggs for 10 minutes. Within this time you cut the vegetables in julienne size.

  • Heat the pans in a medium flame and add ⅕ cup oil.

  • Sautee the eggs and vegetables in this oil for 5 minutes.

  • Keep both eggs and oil from the pan and pour them onto a plate.

  • Again pour the rest of the oil and take a time to heat.

  • Pour the onion and garlic slice and stir it for 3 minutes.

  • Now mix the sauteed vegetables, bell pepper, and eggs with other spices and stir it for 2 minutes.

  • If you wish then sprinkle some water and cover it with a lid for 15 minutes on a low flame.

  • Turn off the heat, your roasted meal is ready to eat.


How many people eat: 4 people


Cooking time: 35 minutes.



Health benefits: You can get a large number of proteins from eggs. The varieties of vegetables contain different vitamins such as A, B, C, etc.


You can serve this dish with bread or rice. I hope it makes healthy grabbing much more enjoyable.
